Description

Creamy baked casserole layered with chicken, green chiles, tortillas, and melted cheese.


Ingredients

2 cups cooked chicken, shredded or diced

2 cups shredded cheddar cheese, divided

1/3 cup sour cream

1 (4-ounce) can diced green chiles, drained

1 (15-ounce) can green chile enchilada sauce

1 (10.5-ounce) can cream of chicken soup

12 corn tortillas (6-inch)

Salt and black pepper, to taste


Instructions

1. Preheat the oven to 350°F.

2. Mix soup, sour cream, 1/3 cup enchilada sauce, salt, and pepper. Fold in chicken and green chiles.

3. Spread 1/4 cup sauce in an 8×8-inch dish. Add 3 tortillas.

4. Layer one-third chicken mixture and 1/3 cup sauce. Add 3 tortillas.

5. Repeat with another third of chicken, sauce, and 1 cup cheese. Add tortillas.

6. Add remaining chicken, sauce, tortillas, and top with remaining sauce and cheese.

7. Bake uncovered 25–30 minutes until bubbly.

8. Rest 5–10 minutes before serving.

Notes

Use certified gluten-free tortillas if needed. Resting helps the casserole set before slicing.
