Description
A bright, fresh cranberry salsa made with ginger, herbs, lime, and jalapeño. This no-cook appetizer comes together in minutes and delivers bold, refreshing flavor.
Ingredients
12 ounces fresh cranberries
1/3 cup granulated sugar
1/2 jalapeño, seeds and membranes removed
1-inch piece fresh ginger, peeled
1 garlic clove
1/2 cup fresh cilantro leaves
1/2 cup fresh parsley leaves
Juice of 1–2 limes
Zest of 1 lime
1/2 teaspoon salt, plus more to taste
1/2 cup roasted salted pistachios, finely chopped (optional)
Instructions
1. Place the fresh cranberries in a food processor and pulse several times until finely chopped but not pureed. Transfer to a mixing bowl.
2. Add the sugar and stir until the cranberries are evenly coated.
3. Add jalapeño, ginger, garlic, cilantro, and parsley to the food processor and pulse until finely chopped.
4. Add the herb mixture to the cranberries and stir.
5. Mix in lime juice, lime zest, and salt until well combined.
6. Cover and refrigerate for 12–24 hours to allow flavors to develop.
7. Stir in finely chopped pistachios just before serving if using.
Notes
Letting the salsa rest in the refrigerator deepens the flavor and softens the cranberries.
Adjust lime juice and sugar to taste depending on cranberry tartness.
Add pistachios right before serving to maintain crunch.
