Juicy chicken bites coated in garlic butter and Parmesan, cooked quickly in a skillet for a flavorful and satisfying dinner.
Ingredients
3 cloves garlic, minced
1/4 cup finely grated Parmesan cheese
1 teaspoon finely chopped fresh parsley
1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
4 tablespoons unsalted butter, divided
Pinch of red pepper flakes (optional)
Instructions
1. Prepare the garlic, Parmesan, and parsley, setting them aside.
2. Season the chicken pieces with salt and pepper in a large bowl, tossing to coat evenly.
3. Warm 2 tablespoons of butter in a large skillet over medium heat. Add half of the chicken in a single layer and cook for about 4 minutes, or until the bottom develops a golden crust. Flip and cook for another 2 minutes, or until the chicken is fully cooked. Transfer to a plate.
4. Add another tablespoon of butter to the skillet and repeat with the remaining chicken. Transfer to the same plate once cooked.
5. Lower the heat and add the final tablespoon of butter along with the minced garlic. Return all cooked chicken and its juices to the pan. Stir for about 1 minute, just until the garlic becomes fragrant and the butter is fully melted.
6. Remove from heat, sprinkle in the Parmesan, and toss until the chicken is evenly coated.
7. Finish with parsley and optional red pepper flakes before serving.
Notes
Serve immediately for best texture. Refrigerate leftovers in an airtight container for up to four days.
