Description

This easy stuffed stromboli is a golden baked pizza roll filled with turkey pepperoni, smoked turkey, provolone, mozzarella, and roasted peppers. Perfect for quick family dinners or party slices.


Ingredients

1 pound prepared pizza dough

All-purpose flour, for sprinkling

16 thin slices turkey pepperoni

8 slices smoked turkey or cooked chicken breast

16 slices provolone cheese

1 1/2 cups shredded mozzarella cheese

1 cup chopped sweet piquante peppers or roasted red peppers, drained

1 tablespoon drained capers

1 large egg, lightly beaten

2 tablespoons grated Parmesan cheese


Instructions

1. Preheat the oven to 400°F. Place a rack in the lower third of the oven.

2. Lay a 16-inch sheet of parchment paper on the counter and lightly dust it with flour. Roll the pizza dough into a 14-by-11-inch rectangle.

3. Layer turkey pepperoni over the dough leaving a 1/2-inch border.

4. Add provolone slices followed by smoked turkey or chicken and mozzarella cheese.

5. Scatter chopped peppers and capers evenly over the cheese.

6. Brush the edges with beaten egg. Roll the dough tightly from the long side into a log.

7. Place seam-side down and pinch the ends closed, tucking them slightly underneath.

8. Transfer to a baking sheet using the parchment paper. Brush the top with egg and sprinkle with Parmesan.

9. Cut diagonal slits across the top about 1 inch apart.

10. Bake for 15 minutes then reduce oven to 375°F and bake 25 minutes until golden brown.

11. Cool for 10 minutes before slicing and serving.

Notes

Allow the stromboli to rest before slicing so the cheese settles.

You can substitute roasted vegetables or cooked sausage for the turkey fillings if desired.

Serve with marinara sauce for dipping.
