Description

A creamy slow cooker buffalo chicken dip made with shredded chicken, buffalo sauce, vegetables, and dairy-free ingredients. Perfect for parties and game day.


Ingredients

1 pound boneless chicken breast

3/4 cup buffalo sauce, divided

1/2 cup mayonnaise, divided

1 red bell pepper, finely diced

2 celery stalks, finely diced

3 green onions, trimmed and sliced (white and green parts separated)

1/4 cup unsweetened almond milk or coconut milk (plain, not vanilla)

For serving:

Celery sticks

Carrot sticks

Mini bell peppers

Tortilla chips

Optional topping:

Additional hot sauce

Dairy-free ranch-style dressing


Instructions

1. In a small bowl, whisk together 1/2 cup of the buffalo sauce and 1/4 cup of the mayonnaise until smooth.

2. Place the chicken breast in the slow cooker. Add the buffalo sauce mixture, diced red bell pepper, diced celery, and the white portions of the green onions. Stir gently to combine.

3. Cover and cook on high for 3 to 4 hours, or on low for 5 to 6 hours, until the chicken is fully cooked and tender.

4. Remove the chicken from the slow cooker and shred or chop it into small pieces.

5. Return the shredded chicken to the slow cooker. Add the remaining 1/4 cup mayonnaise, remaining 1/4 cup buffalo sauce, almond milk, and the green parts of the onions. Stir well to combine.

6. Continue cooking on high for about 30 minutes, or until everything is heated through and creamy. If the dip seems too thick, stir in a little more milk.

7. Serve the dip warm directly from the slow cooker or transfer it to a serving dish.

8. Drizzle with extra hot sauce or dairy-free ranch dressing if desired.

9. Serve with celery sticks, carrot sticks, mini bell peppers, or tortilla chips for dipping.

Notes

If the dip thickens too much, stir in a splash of almond milk to loosen the texture.

You can shred the chicken with two forks for the best texture.

The dip can stay warm in the slow cooker on the warm setting during parties.
