Description

Ingredients

1 tablespoon olive oil

3 cloves garlic, minced

1/2 cup chicken stock

2 cans (14.5 ounces each) diced tomatoes, drained

1 tablespoon Italian seasoning

8 ounces cream cheese, softened and cut into cubes

19 ounces frozen cheese tortellini

2 cups cooked, shredded chicken

Grated Parmesan cheese, for serving


Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook for about 30 seconds, just until fragrant.

2. Pour in the chicken stock and add the drained tomatoes. Sprinkle in the Italian seasoning and stir well. Let the mixture simmer for 3 to 4 minutes until warmed through.

3. Reduce the heat to medium-low and add the cream cheese cubes. Stir frequently until the cream cheese melts completely and the sauce becomes smooth and slightly thickened, about 8 to 10 minutes.

4. While the sauce is cooking, prepare the frozen tortellini according to the package directions. Drain well.

5. Add the cooked tortellini and shredded chicken to the skillet. Gently stir until everything is evenly coated in the sauce and heated through.

6. Serve warm with grated Parmesan cheese sprinkled on top, if desired.

Notes

For added flavor, top with crispy bacon bits or a pinch of crushed red pepper flakes. Store leftovers in an airtight container for up to 3 days.
