Ingredients
2 tablespoons butter
1 medium onion, diced
2 garlic cloves, minced
½ teaspoon paprika
½ teaspoon Italian-style dried herbs
1 ½ pounds potatoes, peeled and diced
2 ¼ cups low-sodium vegetable broth
1 cup milk
¼ cup all-purpose flour
1 tablespoon low-sodium soy sauce
1 teaspoon fine salt, or to taste
â…› teaspoon ground black pepper
4 ounces baby spinach
Instructions
1. Melt butter in a large pot over medium heat. Add onion and cook until soft.
2. Stir in garlic, paprika, and dried herbs and cook until fragrant.
3. Add potatoes and vegetable broth. Bring to a boil, then simmer until potatoes are tender.
4. Whisk milk and flour until smooth.
5. Stir milk mixture and soy sauce into the pot and simmer until thickened.
6. Season with salt and black pepper.
7. Add spinach and cook until wilted. Serve hot.
Notes
Stir continuously when adding the milk mixture to prevent lumps. Adjust thickness with extra broth if needed.
