Creamy Spinach Chicken Lasagna Roll Ups combine tender pasta, rich spinach cream sauce, shredded chicken, marinara, and melted mozzarella baked to perfection.
Ingredients
3 tablespoons butter
1/2 yellow onion, finely diced
2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon ground nutmeg
2 cups heavy cream
1/2 cup finely grated Parmesan cheese
24 ounces frozen spinach, thawed and squeezed dry
3 cups cooked shredded chicken
10 lasagna noodles
16 ounces marinara sauce
1 cup shredded mozzarella cheese
Fresh chopped parsley (optional)
Instructions
1. Preheat oven to 375°F.
2. Cook lasagna noodles until al dente, drain, and place in cool water.
3. Melt butter and sauté onion until soft.
4. Add salt, pepper, nutmeg, and heavy cream; simmer gently.
5. Stir in Parmesan, spinach, and shredded chicken; cook until thickened.
6. Lay noodles flat and spread filling evenly.
7. Roll noodles into spirals.
8. Spread marinara in baking dish and arrange rolls seam-side down.
9. Top with remaining marinara and mozzarella.
10. Bake 20 minutes until bubbly and heated through.
Notes
Squeeze spinach thoroughly to avoid excess moisture.
Let rolls rest before serving for cleaner slices.
Can be assembled ahead and refrigerated before baking.
