Ingredients

    • 4 boneless, skinless chicken breasts, thinly sliced

    • 2 tablespoons olive oil

    • Salt and pepper to taste

    • 8 ounces sliced mushrooms

For the Creamy Garlic Parmesan Sauce:

    • 1/4 cup butter

    • 2 garlic cloves, minced

    • 1 tablespoon flour

    • 1/2 cup chicken broth

    • 1 cup heavy cream or half-and-half

    • 1/2 cup grated Parmesan cheese

    • 1/2 teaspoon garlic powder

    • 1/4 teaspoon pepper

    • 1/2 teaspoon salt

    • 1 cup chopped spinach


Instructions

  • Warm the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3 to 5 minutes per side, or until browned and cooked through. Transfer the chicken to a plate.

  • Add the mushrooms to the skillet and cook until they soften, then remove and set aside.

  • Add the butter to the skillet and let it melt. Stir in the garlic and cook briefly until fragrant.

  • Whisk in the flour and cook for about a minute to form a roux.

  • Slowly whisk in the chicken broth followed by the cream. Stir in the Parmesan, garlic powder, pepper, and salt.

  • Add the spinach and simmer until the sauce thickens slightly and the spinach wilts.

  • Return the chicken and mushrooms to the skillet, coating them in the sauce. Serve warm, with pasta or rice if desired.
