4 boneless, skinless chicken breasts, thinly sliced

8 ounces sliced mushrooms

For the Creamy Garlic Parmesan Sauce:

1/4 cup butter

2 garlic cloves, minced

1 tablespoon flour

1/2 cup chicken broth

1 cup heavy cream or half-and-half

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon pepper

1/2 teaspoon salt

1 cup chopped spinach

Instructions

Warm the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3 to 5 minutes per side, or until browned and cooked through. Transfer the chicken to a plate.

Add the mushrooms to the skillet and cook until they soften, then remove and set aside.

Add the butter to the skillet and let it melt. Stir in the garlic and cook briefly until fragrant.

Whisk in the flour and cook for about a minute to form a roux.

Slowly whisk in the chicken broth followed by the cream. Stir in the Parmesan, garlic powder, pepper, and salt.

Add the spinach and simmer until the sauce thickens slightly and the spinach wilts.
