Ingredients
2 pounds boneless, skinless chicken breast, thinly sliced
8 ounces baby bella mushrooms, sliced
4 ounces white mushrooms, sliced
1/2 sweet yellow onion, thinly sliced
4 ounces cream cheese, softened
1/2 cup sour cream
1 cup shredded mozzarella cheese
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon smoked paprika
Fresh parsley, finely chopped (optional, for garnish)
Instructions
1. Preheat your oven to 375°F.
2. In a large mixing bowl, stir together the softened cream cheese and sour cream until smooth.
3. Add the garlic powder, salt, onion powder, black pepper, smoked paprika, and shredded mozzarella. Mix until well combined.
4. Fold in the sliced mushrooms and onions, stirring until everything is evenly coated in the creamy mixture.
5. Arrange the sliced chicken breasts in a single layer in a large baking dish.
6. Spoon the mushroom and cream mixture evenly over the chicken, spreading it to fully cover the surface.
7. Bake uncovered for 35 to 45 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F.
8. Remove from the oven and let rest for a few minutes. Garnish with fresh parsley if desired, then serve warm.
Notes
For added depth of flavor, sauté the mushrooms and onions briefly before adding to the sauce mixture.
You can use chicken thighs instead of breasts for a richer texture.
