A comforting pasta dish with tender chicken, bright lemon, fresh herbs, and a creamy sauce that can be finished in the oven or served straight from the skillet.
Ingredients
8 ounces short pasta
8 ounces chicken, bite-sized pieces
1 tablespoon butter
1/4 small onion, diced
1 clove garlic, minced
2 tablespoons chicken broth
2 tablespoons lemon juice
Zest from 1/2 lemon
2 tablespoons fresh tarragon
1/2 cup heavy cream
2 cups fresh spinach
4 ounces mozzarella cheese
1/4 cup grated Parmesan cheese
Instructions
1. Preheat oven to 400°F if baking and grease a baking dish.
2. Cook pasta until al dente, drain, and set aside.
3. Melt half the butter and cook chicken until done. Remove and set aside.
4. Add remaining butter, cook onion until soft, then add garlic.
5. Deglaze with broth and stir in lemon juice, zest, tarragon, and cream.
6. Add spinach until wilted, return chicken, and stir.
7. Fold in pasta and serve or transfer to baking dish.
8. Add cheeses and bake 20 minutes until golden.
Notes
Serve immediately for best texture. Add a splash of broth when reheating leftovers.
