Ingredients

1 (16-ounce) package potato gnocchi

2 cups cooked chicken breast, shredded

2 tablespoons unsalted butter

68 garlic cloves, minced

4 tablespoons all-purpose flour

2 teaspoons all-purpose seasoning blend (see below)

1 teaspoon salt

5 cups chicken broth

1 ½ cups heavy cream

2 cups chopped kale, stems removed

1 cup freshly grated Parmesan cheese


Instructions

1. Place a large pot or Dutch oven over medium-high heat and add the butter. Once melted, stir in the minced garlic and cook for 1–2 minutes, just until fragrant.

2. Sprinkle in the flour, seasoning blend, and salt. Stir continuously until everything is well combined and lightly golden.

3. Slowly pour in the chicken broth, stirring constantly to prevent lumps. Continue stirring until the soup base thickens slightly.

4. Add the heavy cream, kale, shredded chicken, and gnocchi. Stir well and bring to a gentle simmer.

5. Let the soup cook for 10–12 minutes, or until the gnocchi is tender and floating at the top.

6. Stir in the Parmesan cheese until fully melted and the soup becomes rich and creamy. Simmer for 1–2 more minutes.

7. Remove from heat and serve hot. Enjoy with bread or a simple salad if desired.

Notes

You can substitute spinach for kale, or use rotisserie chicken to save time. For a dairy-free version, use plant-based cream and omit the cheese or use a vegan alternative. This soup thickens as it sits—add extra broth when reheating if needed.
