Description
A rich and flavorful creamy garlic chicken dip made with grilled chicken, cheddar cheese, sour cream, and fresh green onions. Perfect for parties and gatherings.
Ingredients
1 boneless, skinless chicken breast
½ teaspoon salt, divided
½ teaspoon black pepper, divided
1 tablespoon olive oil
1 cup sour cream
¾ cup mayonnaise
1 teaspoon garlic paste or roasted garlic concentrate
½ teaspoon chicken base
1 Roma tomato, seeded and diced
¼ cup green onions, thinly sliced (plus more for garnish)
1 ½ cups shredded cheddar cheese (plus more for garnish)
Instructions
1. Preheat grill to medium-high heat. Season chicken with ¼ teaspoon salt and ¼ teaspoon pepper.
2. Grill chicken 3–4 minutes per side until internal temperature reaches 165°F. Remove and shred or finely dice.
3. Heat olive oil in skillet over medium heat and set aside.
4. In a bowl, mix sour cream, mayonnaise, garlic paste, chicken base, remaining salt and pepper until smooth.
5. Fold in diced tomato, green onions, shredded chicken, and cheddar cheese.
6. Transfer to serving bowl. Garnish with extra cheese and green onions.
7. Serve immediately or refrigerate up to 2 hours. Stir before serving if chilled.
Notes
For best texture, use freshly grilled chicken.
Seed the tomato to prevent excess moisture.
Dip can be refrigerated for up to 3 days in an airtight container.
