Ingredients
1 can (about 16 ounces) refrigerated flaky biscuits (8-count), partially baked
1 can (about 10.5 ounces) cream of mushroom soup
1 can (about 10.5 ounces) cream of chicken soup
1 1/2 cups milk
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried thyme
Salt and black pepper, to taste
1 pound cooked chicken, shredded or chopped
2 cups frozen peas and carrots, thawed
Instructions
1. Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.
2. Arrange the biscuits on a parchment-lined baking sheet and bake for about 8 minutes, just until set but not fully browned. Remove and set aside.
3. In a large bowl, whisk together the cream of mushroom soup, cream of chicken soup, milk, garlic powder, onion powder, thyme, salt, and pepper until smooth.
4. Stir in the cooked chicken and the thawed peas and carrots until everything is well coated.
5. Spread the creamy chicken mixture evenly in the prepared baking dish.
6. Place the partially baked biscuits on top of the filling, baked side facing down.
7. Bake uncovered for 15 minutes.
8. Cover the dish loosely with foil and continue baking for 10 minutes.
9. Remove the foil and bake for another 5 minutes, or until the biscuits are golden brown and the casserole is bubbly.
10. Let rest for a few minutes before serving.
Notes
To make ahead, prepare the filling and partially bake the biscuits. Store separately and assemble just before baking. You can also swap in leftover turkey, or use plant-based cream soups and dairy-free milk for a lighter version.
