Description

Juicy chicken breasts topped with fresh marinated tomatoes, basil, and melted mozzarella, baked to perfection.


Ingredients

6 boneless, skinless chicken breasts, pounded thin

2 tablespoons extra virgin olive oil

2 teaspoons fig preserves (optional)

1 tablespoon balsamic vinegar

2 tablespoons Italian seasoning

1 teaspoon dried oregano

1 clove garlic, finely chopped

1/4 cup fresh basil, chopped

Salt, black pepper, and red pepper flakes, to taste

1 cup shredded mozzarella or Gouda cheese

1/2 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon fig preserves (optional)

1 tablespoon honey

1 small shallot, finely chopped

2 cloves garlic, finely chopped

3 cups cherry tomatoes, halved

1 cup fresh basil, chopped

Salt, black pepper, and red pepper flakes, to taste

Toasted crusty bread for serving


Instructions

1. Preheat oven to 400°F and lightly grease a baking dish or oven-safe skillet.

2. Combine chicken with olive oil, fig preserves, balsamic vinegar, Italian seasoning, oregano, garlic, basil, salt, pepper, and red pepper flakes. Marinate at least 5 minutes.

3. In another bowl, mix olive oil, balsamic vinegar, fig preserves, honey, shallot, garlic, cherry tomatoes, basil, salt, pepper, and red pepper flakes.

4. Sear chicken in a hot oven-safe skillet for 3 minutes per side until golden.

5. Top each breast with marinated tomatoes and sprinkle with cheese.

6. Transfer skillet to oven and bake 10 minutes until chicken reaches 165°F.

7. Top with remaining tomato mixture and fresh basil. Serve with toasted bread.

Notes

Marinate overnight for deeper flavor.

Use fresh basil for best results.
