Description
A rich and creamy chicken bacon casserole topped with golden tater tots and melty cheese. This crowd-pleasing bake is the perfect weeknight comfort food.
Ingredients
3 cups cooked, shredded chicken
1 can (10.5 ounces) cream of chicken soup
1 cup sour cream
1/2 cup milk
2 tablespoons dry ranch seasoning mix
Black pepper, to taste
1 1/2 cups shredded Colby-Jack cheese, divided
4 slices turkey bacon, cooked and crumbled
5 cups frozen tater tots
1/4 cup green onions, thinly sliced
Instructions
1. Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish.
2. In a large bowl, stir together the shredded chicken, cream of chicken soup, sour cream, milk, ranch seasoning, black pepper, and 1 cup of the shredded cheese until smooth and well mixed.
3. Spread the chicken mixture evenly into the prepared baking dish.
4. Sprinkle half of the crumbled turkey bacon over the chicken layer.
5. Arrange the frozen tater tots evenly across the top.
6. Bake uncovered for 30 minutes, until the casserole is hot and bubbling.
7. Remove from the oven, sprinkle with the remaining 1/2 cup cheese, and return to the oven for 10 more minutes, or until the cheese is melted and lightly golden.
8. Let cool slightly, then finish with the remaining turkey bacon and green onions before serving.
Notes
For a tangier flavor, substitute Greek yogurt for sour cream.
You can use rotisserie chicken for convenience.
Store leftovers in an airtight container in the fridge for up to 4 days.
