Ingredients

2 pounds yellow potatoes, diced into 1-inch cubes

3 large boneless, skinless chicken breasts, cut into bite-size pieces

3 tablespoons olive oil or melted butter

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 tablespoon dried parsley

6 ounces smoked turkey strips, cooked until crisp and chopped

8 ounces shredded cheddar cheese

Optional garnish: sliced green onions or a spoonful of sour cream


Instructions

1. Preheat your oven to 400°F. Lightly grease a 9 x 13-inch casserole dish.

2. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and dried parsley.

3. Add the diced potatoes to the casserole dish. Drizzle with olive oil or melted butter and toss with half of the seasoning blend until evenly coated. Spread into an even layer.

4. Bake the potatoes uncovered for 30 minutes, stirring once halfway through for even browning.

5. While the potatoes cook, toss the chicken pieces with the remaining seasoning blend.

6. Remove the casserole from the oven and layer the seasoned chicken evenly over the potatoes. Return to the oven and bake for 15 minutes, or until the chicken is fully cooked.

7. Sprinkle the shredded cheddar cheese evenly over the casserole, followed by the chopped smoked turkey pieces.

8. Bake for an additional 5 minutes, just until the cheese is melted and bubbly.

9. Let the casserole rest for a few minutes before serving. Garnish as desired and serve warm.

Notes
