Ingredients

1 tablespoon olive oil

1 medium yellow onion, finely diced

8 ounces white mushrooms, sliced

6 cups chicken broth

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon ground black pepper

2 cups baby spinach, lightly packed

2 boneless, skinless chicken breasts, cooked and shredded


Instructions

1. Heat the olive oil in a large pot over medium heat.

2. Add the diced onion and cook, stirring occasionally, until soft and translucent, about 5 minutes.

3. Stir in the sliced mushrooms and cook until they release their moisture and reduce in size, about 5 more minutes.
