A comforting soup made with tender chicken, mushrooms, vegetables, and a creamy broth that works for both dinner and meal prep.
Ingredients
2 tablespoons olive oil
2 tablespoons unsalted butter
1 small onion, diced
1 celery stalk, diced
1 medium carrot, diced
2 garlic cloves, minced
6 ounces mushrooms, sliced
1/2 teaspoon dried oregano
1/2 teaspoon dry mustard
1/4 teaspoon dried thyme
1/4 cup all-purpose flour
4 cups chicken broth
1/4 cup dry orzo pasta
3 cups cooked shredded chicken
3/4 cup heavy cream
Kosher salt
Black pepper
Fresh parsley
Instructions
1. Heat oil and butter in a large pot and cook onion, celery, and carrot until softened.
2. Add garlic, mushrooms, herbs, salt, and pepper and cook until mushrooms are tender.
3. Stir in flour and cook briefly.
4. Slowly add broth while stirring, then bring to a simmer and add orzo.
5. Simmer until pasta is tender.
6. Stir in chicken and cream and heat through.
7. Serve with parsley.
Notes
Stir frequently once pasta is added to prevent sticking. Adjust seasoning just before serving.
