Creamy Cajun Shrimp Pasta made with tender shrimp, penne, and a rich Cajun-spiced cream sauce.
Ingredients
8 ounces penne pasta
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
2 tablespoons Cajun seasoning, divided
2 tablespoons unsalted butter
2 garlic cloves, finely minced
1/2 cup diced tomatoes
1 1/2 cups heavy cream
1/2 cup grated Parmesan cheese
Chopped fresh parsley
Instructions
1. Cook pasta until al dente and reserve pasta water.
2. Season shrimp and cook briefly in olive oil until opaque.
3. Melt butter, sauté garlic, and soften tomatoes.
4. Add cream, seasoning, and Parmesan; simmer gently.
5. Return shrimp and pasta, toss, and adjust sauce.
6. Serve warm with Parmesan and parsley.
Notes
Adjust Cajun seasoning to taste. Add spinach at the end if desired.
