Ingredients
8 ounces penne pasta
1 pound boneless, skinless chicken thighs, cut into bite-size pieces
1 tablespoon olive oil
4 teaspoons Cajun seasoning
1/2 cup shredded sharp cheddar cheese
Fresh parsley, finely chopped (optional, for garnish)
Alfredo Sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1/4 cup grated Parmesan cheese
1/4 cup shredded cheddar cheese
Instructions
1. Bring a pot of salted water to a boil and cook the penne according to package directions until just tender. Drain and set aside. Preheat the oven to 400°F.
2. Season the chicken pieces evenly with the Cajun seasoning. Heat the olive oil in a large skillet over medium heat, then add the chicken. Cook for about 6–7 minutes, stirring occasionally, until the chicken is cooked through.
3. To make the sauce, melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for about 1 minute, stirring constantly.
4. Slowly pour in the milk while whisking to keep the sauce smooth. Bring to a gentle simmer and cook for 2–3 minutes until slightly thickened. Remove from heat and stir in both cheeses until melted and creamy.
5. Add the cooked pasta and Alfredo sauce to the skillet with the chicken. Toss gently until everything is well coated.
6. Transfer the mixture to a lightly greased baking dish and sprinkle the remaining cheddar cheese evenly over the top.
7. Bake for 5–10 minutes, or until the cheese is melted and bubbly. For a golden top, briefly place under the broiler, watching closely.
8. Serve hot, garnished with chopped parsley if desired.
Notes
You can prepare the pasta bake ahead of time and refrigerate before baking. To adjust the spice level, reduce or increase the Cajun seasoning to taste. Swap penne with rigatoni or ziti for variety.
