A creamy, spicy twist on classic comfort food, this buffalo chicken soup combines the bold heat of hot sauce with velvety cream cheese, hearty vegetables, and tender chicken. Perfect for chilly nights or whenever you’re craving big flavor.
Ingredients
2 tablespoons ghee or unsalted butter
1/2 white onion, diced
5 carrot sticks, sliced into coins
5 celery stalks, diced
4 heaping cups cauliflower florets
2 garlic cloves, minced
1 tablespoon dried parsley
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried dill
1/2 teaspoon salt
1/2 teaspoon black pepper
4 cups chicken stock
1/3 cup buffalo-style hot sauce
4 large boneless, skinless chicken breasts (about 3 pounds)
4 ounces cream cheese, softened

Crumbled blue cheese
Sliced green onions
Crushed tortilla chips
Instructions
1. Wash and prepare all vegetables, dicing the onion and celery, slicing the carrots, and cutting the cauliflower into small florets.
2. Heat the ghee or butter in a large soup pot over medium-high heat. Add the onion, carrots, celery, and cauliflower. Cook for 6–8 minutes, stirring occasionally, until the vegetables begin to soften.
3. Stir in the minced garlic, dried parsley, garlic powder, onion powder, dried dill, salt, and pepper. Cook for about 30 seconds until fragrant.
4. Pour in the chicken stock and hot sauce. Add the chicken breasts, making sure they are fully submerged in the liquid.
5. Bring the soup to a boil, then cook for about 12 minutes, or until the chicken is cooked through.
6. Remove the chicken from the pot and set aside. Carefully transfer a little more than half of the soup (including vegetables and broth) to a blender and blend until smooth.
7. Return the blended mixture to the pot and whisk in the cream cheese until fully melted and creamy.
8. Chop or shred the cooked chicken into bite-sized pieces and add it back to the soup.
9. Reduce the heat to medium-low and simmer for 10 minutes to allow the flavors to come together.
10. Serve hot and garnish with green onions, blue cheese, tortilla chips, or extra hot sauce if desired.
Notes
For a dairy-free version, substitute the cream cheese with a plant-based alternative.
To adjust spice level, use a milder hot sauce or reduce the amount slightly.
