Creamy Broccoli Cheddar Chicken Soup is rich, comforting, and packed with tender chicken, vegetables, and melted cheddar cheese.
Ingredients
3 boneless, skinless chicken breasts
Salt, garlic powder, and onion powder, to taste
1 tablespoon olive oil
5 tablespoons butter, divided
1 white onion, finely chopped
1/4 cup all-purpose flour
4 cups low-sodium chicken broth
1 cup heavy cream
3 cups broccoli florets, roughly chopped
2 carrots, chopped
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon dry mustard
1/4 teaspoon cayenne pepper (optional)
8 ounces sharp cheddar cheese, shredded
Instructions
1. Pat the chicken dry and season well.
2. Cook chicken in olive oil until done, then rest and dice.
3. Melt butter and cook onion until soft.
4. Add remaining butter and flour, whisk into a roux.
5. Gradually whisk in broth and cream until thickened.
6. Add vegetables and seasonings, then simmer.
7. Blend soup to desired consistency.
8. Stir in cheese slowly, then add chicken and serve.
Notes
Blend fully for a smooth soup or partially for more texture. Add cheese off heat to prevent separation.
