Ingredients
1 1/2 tablespoons olive oil
8 ounces smoked turkey or beef sausage, sliced into 1/3-inch rounds
2 garlic cloves, minced
1/2 teaspoon dried thyme
1/2 teaspoon smoked paprika
1 bay leaf
1 can (14 ounces) crushed tomatoes
1 can (14 ounces) chickpeas, drained
1 cup low-sodium chicken broth
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Warm the olive oil in a medium pot over medium-high heat. Add the sausage slices and cook for about 3 minutes, or until lightly browned.
2. Stir in the garlic, thyme, paprika, and bay leaf. Cook for 1 minute to release their aroma.
3. Add the crushed tomatoes, chickpeas, and chicken broth. Season with salt and pepper, then bring everything to a gentle simmer.
4. Reduce the heat to medium-low and cook uncovered for about 15 minutes, stirring occasionally, until the stew thickens.
5. Remove the bay leaf and serve warm with bread or over couscous, pasta, or mashed potatoes.
Notes
Adjust consistency with extra broth if desired. Garnish with parsley or lemon for brightness.
