Description

A quick and flavorful Chinese Beef Stir Fry with tender beef, crisp vegetables, and a glossy savory sauce, ready in under 25 minutes.


Ingredients

7 oz beef flank or rump steak, thinly sliced

1/2 tsp baking soda

2 tbsp light soy sauce

1 tbsp oyster sauce

1/2 cup low-sodium chicken broth (divided)

1 tsp sugar

1/2 tsp toasted sesame oil

Pinch white or black pepper

3 tsp cornstarch

1 1/2 tbsp neutral oil

1 garlic clove, minced

1/2 small onion, sliced

1/2 red bell pepper, sliced

1 small carrot, sliced on the diagonal

2 bok choy, stems and leaves separated

2 green onions, cut into 1 1/2-inch pieces (white and green parts separated)

Cooked white rice (for serving)


Instructions

1. Place the sliced beef in a bowl and sprinkle with baking soda. Toss and rest for 20 minutes. Rinse and drain well.

2. Combine soy sauce, oyster sauce, 1/4 cup broth, sugar, sesame oil, and pepper. Reserve 1 1/2 tbsp. Stir cornstarch into remaining sauce with broth.

3. Coat beef with reserved sauce and let absorb.

4. Heat oil in a large skillet or wok. Add onion and garlic; cook 10 seconds.

5. Add beef; stir fry until lightly browned.

6. Add bell pepper, carrot, bok choy stems, and white green onions. Stir fry 1 minute.

7. Pour in the sauce; cook until bubbling and thickened.

8. Add bok choy leaves and green onion tops; stir 30–60 seconds.

9. Serve over warm rice.

Notes

Slice beef thinly across the grain for tenderness.

Keep vegetables crisp by cooking quickly over high heat.

Add chili paste for heat if desired.
