Description

A rich and creamy chili cheese dip made with seasoned beef, melted cheese, and hearty beans—perfect for parties and game day.


Ingredients

1 tablespoon olive oil

8 ounces ground beef

2 garlic cloves, finely chopped

1/2 small red onion, chopped

1 tablespoon chili powder

1 teaspoon ground cumin

1/2 teaspoon kosher salt

1/2 teaspoon black pepper

1 cup beef broth

1 can (8 ounces) tomato sauce

1 can (15 ounces) pinto beans, rinsed and drained

8 ounces processed cheese, cubed

2 cups shredded sharp yellow cheddar cheese

1/2 cup pico de gallo

Tortilla chips, for serving


Instructions

1. Heat olive oil in a large skillet over medium-high heat. Add ground beef, garlic, and red onion.

2. Add chili powder, cumin, salt, and pepper. Cook for 3 to 4 minutes until beef is browned.

3. Stir in beef broth, tomato sauce, and pinto beans. Bring to a simmer.

4. Reduce heat to medium-low and cook for 10 minutes, stirring occasionally.

5. Lower heat to low. Add processed cheese and stir until melted.

6. Add cheddar cheese gradually, stirring until smooth.

7. Transfer to serving dish, top with pico de gallo, and serve with tortilla chips.

Notes

Stir frequently while melting cheese to avoid separation.

Add a splash of broth when reheating if the dip thickens too much.

Serve immediately for best texture.
