Description

Chicken Taco Biscuit Cups combine seasoned taco meat, salsa, and cheddar cheese baked inside golden buttermilk biscuit shells. Perfect for quick weeknight dinners or party appetizers.


Ingredients

1 can (16.3 ounces) refrigerated buttermilk biscuits (8 count)

1 pound ground beef, ground turkey, or ground chicken

1 packet taco seasoning mix

1/2 cup salsa

3/4 cup shredded cheddar cheese

Optional toppings: sliced green onions, sliced black olives, diced avocado, sour cream


Instructions

1. Preheat oven to 375°F. Lightly coat 8 muffin cups with cooking spray.

2. Cook ground meat in a skillet over medium heat until browned. Drain excess grease.

3. Stir in taco seasoning and prepare according to package directions.

4. Flatten each biscuit to 4–4 1/2 inches wide and press into muffin cups.

5. Spoon seasoned meat evenly into each biscuit cup.

6. Top each with salsa and shredded cheddar cheese.

7. Bake for 15–18 minutes until golden brown and cheese is melted.

8. Cool slightly, loosen edges with a knife, and remove from pan. Serve warm with optional toppings.

Notes

Ground chicken, turkey, or beef all work well.

Keep cheese centered to prevent overflow.

Store leftovers in refrigerator up to 3 days or freeze individually.
