Description

Chicken-Stuffed Sweet Potatoes made with tender baked sweet potatoes, seasoned shredded chicken, melted mozzarella, and fresh spring onion for a comforting, balanced dish.


Ingredients

4 medium sweet potatoes

2 small boneless, skinless chicken breasts (or 1 large)

1/2 cup shredded mozzarella cheese

1 spring onion, finely chopped

1 teaspoon garlic powder

1 teaspoon paprika

1/4 teaspoon salt

1/8 teaspoon black pepper

1 tablespoon vegetable oil

Sour cream or plain Greek yogurt, for serving


Instructions

1. Preheat oven to 400°F and line a baking sheet with parchment paper.

2. Pierce sweet potatoes with a fork and place on baking sheet.

3. Combine chicken, oil, garlic powder, paprika, salt, and pepper in a bowl.

4. Place chicken in a small baking dish on the same sheet.

5. Bake 25–30 minutes until chicken reaches 165°F; continue baking potatoes until fork-tender.

6. Shred cooked chicken with two forks.

7. Mix shredded chicken with mozzarella and spring onion.

8. Slice sweet potatoes open and fluff the insides.

9. Fill each potato with chicken mixture.

10. Return to oven 5–10 minutes until cheese melts.

11. Serve warm with sour cream or Greek yogurt.

Notes

For a smoky variation, mix shredded chicken with barbecue sauce before stuffing.

Store leftovers in an airtight container for up to 3 days.

Reheat in the oven for best texture.
