Ingredients

3 tablespoons butter

½ cup finely diced onion

2 cloves garlic, minced

3 tablespoons all-purpose flour

1 ½ cups frozen mixed vegetables

2 cups cooked chicken or turkey, chopped

2 ½ cups chicken broth, divided

1 teaspoon salt

¼ teaspoon ground black pepper

¼ teaspoon poultry seasoning

3 cups mashed potatoes

Up to ¼ cup milk (optional, for creamier potatoes)


Instructions

1. Preheat oven to 350°F and melt butter in a sauté pan over medium-high heat.

2. Cook onion until softened, then add garlic.

3. Stir in flour and cook briefly.

4. Add vegetables and chicken.

5. Slowly stir in broth and seasonings.

6. Simmer until thickened.

7. Warm mashed potatoes and add milk if desired.

8. Transfer filling to baking dish and top with potatoes.

9. Bake until set and hot.
