Description

Chicken Ranch Nacho Boats are filled with tender chicken, creamy ranch dressing, and melted cheddar cheese baked in soft taco boats for a quick and satisfying dinner.


Ingredients

1 1/2 pounds cooked chicken breast, cubed (about 4 cups)

1/2 cup ranch dressing

1/2 teaspoon garlic powder

8 soft flour taco boats or soft flour tortillas shaped into boats

1 3/4 cups shredded cheddar cheese

3 tablespoons sliced green onions


Instructions

1. Preheat oven to 350°F and line a baking sheet with parchment paper or lightly grease it.

2. In a large bowl, combine cubed chicken, ranch dressing, and garlic powder. Stir until evenly coated.

3. Arrange taco boats on the baking sheet and spoon the chicken mixture evenly into each.

4. Sprinkle shredded cheddar cheese over each filled boat.

5. Bake for 5 to 8 minutes until heated through and cheese is melted.

6. Remove from oven, top with sliced green onions, and serve warm.

Notes

You can microwave the assembled boats if short on time.

For extra flavor, add diced tomatoes or jalapeños before baking.
