Description

Chicken Parmesan Rolls are baked until golden and filled with grilled chicken, marinara sauce, and mozzarella cheese for a high-protein Italian-inspired dinner.


Ingredients

For the Dough:

1 cup all-purpose flour (plus extra for dusting)

1 1/2 teaspoons baking powder

1/2 teaspoon kosher salt

1 cup nonfat plain Greek yogurt (drained if any liquid is present)

For the Filling:

8 ounces grilled chicken breast, sliced (about 2 cups)

1/2 cup marinara sauce

3/4 cup shredded part-skim mozzarella cheese

For the Egg Wash:

1 large egg, beaten

1 tablespoon sesame seeds


Instructions

1. In a medium mixing bowl, whisk together the flour, baking powder, and salt.

2. Add the Greek yogurt and stir until small crumbles form.

3. Transfer to a floured surface and knead for 2 to 3 minutes until smooth.

4. Preheat oven to 425°F and line a baking sheet with parchment paper.

5. Divide dough into 4 portions and roll each into a 7-inch circle.

6. Spread 1 tablespoon marinara down the center of each circle.

7. Top with sliced chicken, another tablespoon marinara, and mozzarella.

8. Fold both sides over the filling and press to seal.

9. Brush with beaten egg and sprinkle with sesame seeds.

10. Bake for 20 minutes until golden brown. Serve warm.

Notes

Use thick marinara sauce to prevent soggy rolls.

Do not overfill to ensure proper sealing.

Reheat in the oven for best texture.
