Description
Chicken Parmesan Pizza Rolls made with Greek yogurt dough, grilled chicken, marinara, and mozzarella. High-protein, easy, and perfect for weeknight dinners.
Ingredients
For the Dough:
1 cup all-purpose flour (plus extra for dusting)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup nonfat plain Greek yogurt (drained if any liquid is present)
For the Filling:
8 ounces grilled chicken breast, sliced (about 2 cups)
1/2 cup marinara sauce
3/4 cup shredded part-skim mozzarella cheese
For the Egg Wash:
1 large egg, beaten
1 teaspoon sesame seeds (optional)
Instructions
1. In a medium mixing bowl, whisk together the flour, baking powder, and salt.
2. Add the Greek yogurt and stir with a fork or spatula until the mixture forms small crumbles.
3. Lightly flour a clean work surface and transfer the dough onto it. Knead for about 2–3 minutes (roughly 20 turns) until smooth.
4. Preheat your oven to 425°F. Line a baking sheet with parchment paper or a silicone baking mat.
5. Divide the dough into 4 equal portions and roll each into a ball.
6. On a lightly floured surface, roll each ball into a thin circle about 7 inches in diameter.
7. Spread 1 tablespoon of marinara sauce down the center of each circle. Top with sliced chicken, another tablespoon of marinara, and shredded mozzarella.
8. Fold the right side over the filling, then the left side to seal.
9. Place rolls seam-side down on the baking sheet. Brush with beaten egg and sprinkle sesame seeds if desired.
10. Bake for about 20 minutes, until golden brown. Serve warm.
Notes
Drain Greek yogurt well before mixing to prevent sticky dough.
Do not overfill the rolls to ensure proper sealing.
For extra flavor, add fresh basil or red pepper flakes before sealing.
