Description
A hearty Mediterranean-style stew made with tender chicken thighs, chickpeas, vegetables, and warming spices.
Ingredients
2 tablespoons olive oil
1 ½ pounds boneless, skinless chicken thighs
1 medium onion, diced
2 carrots, peeled and sliced
3 to 4 garlic cloves, minced
1 cup chicken broth
1 can diced tomatoes
1 can chickpeas, drained and rinsed
1 roasted red bell pepper, sliced
1 teaspoon smoked paprika
½ teaspoon ground cumin
¼ teaspoon ground turmeric
Pinch cayenne
â…“ cup chopped herbs
Salt and black pepper
Instructions
1. Season and brown chicken in olive oil; remove.
2. Cook onion and carrots until softened.
3. Add garlic, then deglaze with broth.
4. Stir in tomatoes, chickpeas, pepper, spices, and herbs.
5. Return chicken and simmer 45 minutes.
6. Uncover, shred chicken, and simmer 15 minutes more.
7. Adjust thickness, garnish, and serve.
Notes
Serve over grains or enjoy alone. Adjust spice level as needed.
