Ingredients

2 large chicken breasts, sliced horizontally into 4 cutlets

1 1/2 tablespoons unsalted butter or olive oil
Seasoned Crust:

1 teaspoon paprika

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/4 teaspoon cumin (optional)

3/4 teaspoon kosher salt
-
1/8 teaspoon black pepper
-
1 1/2 tablespoons all-purpose flour
Butter Sauce:

1/3 cup low-sodium chicken broth or water
-
2 tablespoons unsalted butter
-
1 tablespoon chopped parsley (optional)
Instructions

Season the chicken:
Combine the paprika, onion powder, garlic powder, cumin, salt, pepper, and flour in a small bowl. Lightly coat both sides of each chicken cutlet with the mixture, shaking off excess. -
Sear the chicken:
Heat the butter or olive oil in a large nonstick skillet over high heat. Add the chicken and cook for about 2 1/2 minutes per side, or until golden brown and the internal temperature reaches 153°F. Transfer to a plate. -
Make the sauce:
Lower the heat to medium-high. Pour in the chicken broth or water and let it simmer for 1 to 1 1/2 minutes, scraping the browned bits from the pan. Stir in the butter until melted and smooth.

Serve:
Spoon the warm butter sauce over the chicken and finish with parsley if desired.
