This Chicken Bacon Ranch Roasted Potato Bake is the perfect all-in-one comfort dish. Ingredients
3 tablespoons olive oil
2 packets (1 ounce each) dry ranch seasoning mix (about 4 tablespoons total)
2 teaspoons ground black pepper
8 russet potatoes (about 4 pounds), peeled and diced into ½-inch cubes
2 boneless, skinless chicken breasts, cut into ½-inch pieces
1 cup shredded mild cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup cooked and crumbled turkey bacon (non-pork alternative)
Ranch dressing, for serving
Chopped chives, for garnish
Instructions
1. Preheat the oven to 425°F. Line a large baking sheet with parchment paper and set aside.
2. In a small bowl, mix together the olive oil, ranch seasoning, and black pepper.
3. Place the diced potatoes in a large bowl and toss with half of the ranch mixture until evenly coated. Spread the potatoes in a single layer on the prepared baking sheet.
4. Roast the potatoes for 60 to 70 minutes, flipping halfway through, until golden brown and crisp.
5. While the potatoes cook, add the diced chicken to a bowl and toss with the remaining ranch mixture. Cover and refrigerate until ready to use.
6. Once the potatoes are done, lower the oven temperature to 400°F. Lightly grease a 9×13-inch baking dish.
7. Transfer the roasted potatoes into the baking dish and spread them out evenly. Add the seasoned chicken on top.
8. Bake for 18 to 20 minutes, stirring once halfway through, until the chicken is fully cooked and reaches an internal temperature of 165°F.
9. Remove the dish from the oven and sprinkle the shredded cheeses and turkey bacon evenly over the top.
10. Return to the oven for 5 to 10 minutes, or until the cheese is melted and bubbly.
11. Finish with chopped chives and a drizzle of ranch dressing before serving warm.
Notes
You can make this bake ahead by roasting the potatoes and prepping the chicken mixture the night before. Store them separately, then assemble and bake when ready. Leftovers reheat best in the oven or air fryer to preserve the crispiness.
