A creamy, low carb casserole made with tender chicken, turkey bacon, ranch dressing, cheese, and vegetables. Ready in minutes and perfect for busy weeknights.
Ingredients
4 cups cooked boneless, skinless chicken breast, cubed or shredded
1 cup cooked chopped turkey bacon or omit entirely for a pork-free version
3 cloves garlic, minced
1 cup ranch dressing
1 cup shredded mozzarella cheese, divided
1 cup shredded cheddar cheese, divided
5 cups broccoli florets or 1 pound frozen spinach, thawed and well-drained
Instructions
1. Preheat oven to 375°F and lightly grease a 9×13-inch casserole dish
2. Prepare vegetables by blanching broccoli or fully draining thawed spinach
3. Combine chicken, turkey bacon, vegetables, garlic, ranch dressing, and half of both cheeses in a large bowl
4. Spread mixture evenly into the casserole dish
5. Top with remaining cheeses
6. Bake for 15 minutes until hot and bubbly
7. Rest briefly before serving
Notes
Use rotisserie chicken to save time. Drain vegetables well to prevent excess moisture.
