Description
Juicy grilled chicken topped with sautéed mushrooms and melted Swiss cheese, served on soft toasted buns for a satisfying meal.
Ingredients
2 large boneless chicken breasts, sliced horizontally into thinner cutlets
2 garlic cloves, finely grated
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon fish sauce
1 teaspoon Worcestershire sauce
1 tablespoon fresh lemon juice
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon dried thyme
1/4 teaspoon smoked paprika
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
3 tablespoons olive oil
2 cups shredded Swiss cheese
6 baby bella mushrooms, thinly sliced
1 tablespoon avocado oil
2–4 soft sandwich buns
Optional toppings: Dijon-style mustard, mayonnaise, sliced tomato, fresh spinach
Instructions
1. Mix garlic, salt, pepper, fish sauce, Worcestershire sauce, lemon juice, spices, and olive oil.
2. Coat chicken in marinade and refrigerate at least 30 minutes.
3. Preheat grill to medium-high with direct and indirect heat zones.
4. Cook mushrooms in avocado oil until soft and golden; set aside.
5. Grill chicken on direct heat for 7 minutes, flip, then move to indirect heat.
6. Top chicken with mushrooms and Swiss cheese; close lid until melted and chicken reaches 165°F.
7. Rest chicken briefly and toast buns on grill.
8. Assemble sandwiches with optional toppings and serve warm.
Notes
Marinating overnight deepens flavor. Swiss cheese can be substituted with provolone if preferred.
