Description

Creamy skillet chicken with gnocchi and spinach cooked quickly for an easy, satisfying dinner.


Ingredients

1 boneless, skinless chicken breast

1 teaspoon kosher salt

1 tablespoon olive oil

1 tablespoon unsalted butter

1/2 yellow onion, diced

4 garlic cloves, minced

1/4 cup finely grated Parmesan cheese

1 teaspoon ground black pepper

1/2 pound potato gnocchi

4 cups baby spinach

1/2 cup heavy cream

1/4 teaspoon red pepper flakes

Reserved gnocchi cooking water


Instructions

1. Pound and season chicken evenly.

2. Cook chicken in skillet until done and set aside.

3. Boil gnocchi and reserve cooking water.

4. Sauté onion and garlic in same skillet.

5. Add gnocchi and water, simmer briefly.

6. Stir in Parmesan and pepper.

7. Wilt spinach into sauce.

8. Remove from heat, add cream, adjust texture.

9. Slice chicken and serve with gnocchi.

Notes

Add gnocchi water gradually to control sauce thickness.
