Description
A hearty baked potato filled with creamy Alfredo sauce and seasoned chicken. This comfort food dinner is rich, satisfying, and easy to prepare at home.
Ingredients
4 large russet potatoes, scrubbed
1 ½ pounds boneless, skinless chicken breasts or tenderloins
Olive oil
Salt
2 tablespoons butter, melted
1 tablespoon Italian seasoning
1 teaspoon ground black pepper
2 tablespoons fresh parsley, finely chopped
4 tablespoons butter
6 garlic cloves, minced
2 cups heavy cream
1 ½ cups grated Parmesan cheese
1 tablespoon blackened seasoning
Salt and black pepper, to taste
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Rub potatoes with olive oil, season with salt, and bake for 50–60 minutes until fork-tender.
3. Cut chicken into pieces and toss with olive oil, Italian seasoning, pepper, and salt.
4. Cook chicken in a skillet until fully cooked, then set aside.
5. Melt butter in the same skillet, add garlic, and cook until fragrant.
6. Whisk in heavy cream and simmer until slightly thickened.
7. Stir in blackened seasoning and Parmesan until smooth.
8. Drop baked potatoes gently to loosen the interior, slice open, and fluff.
9. Spread melted butter inside potatoes, add sauce, chicken, and more sauce.
10. Finish with parsley and serve warm.
Notes
For added vegetables, fold steamed broccoli into the Alfredo sauce. Reheat leftovers gently with a splash of cream to maintain texture.
