Ingredients

2 cups cooked chicken, cut into bite-size pieces

2 cups creamy Alfredo-style sauce

2 cups chicken broth, plus more as needed

16 ounces potato gnocchi

1/2 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon dried thyme

1/4 teaspoon black pepper

2 cups fresh baby spinach

1 cup grated Parmesan-style cheese (optional, for serving)


Instructions

1. If you are making a homemade Alfredo-style sauce, prepare it before starting the soup.

2. Place a large pot over medium heat and add the Alfredo-style sauce and chicken broth. Whisk until smooth, adding a little more broth if the mixture seems too thick.

3. Stir in the Italian seasoning, salt, thyme, and black pepper until evenly combined.

4. Add the cooked chicken and gnocchi to the pot, stirring gently so everything is well distributed.

5. Bring the soup to a gentle boil, then reduce the heat to a simmer. Cook for about 15 minutes, stirring occasionally, until the gnocchi are tender.

6. Add the spinach and continue simmering for 5 to 10 minutes, just until the greens are wilted and the soup is heated through.

7. Ladle into bowls and, if desired, top each serving with grated Parmesan-style cheese before serving.

Notes

For best results, use high-quality Alfredo sauce or make it from scratch. Shelf-stable gnocchi works well and holds up in the broth. Adjust salt based on the saltiness of your sauce and broth. Add a splash more broth when reheating if the soup thickens in the fridge.
