Description

Cheesy Spinach Stuffed Mushrooms are a warm, creamy, crowd-pleasing appetizer perfect for parties and family dinners.


Ingredients

12 medium to large cremini mushrooms

1 tablespoon unsalted butter

2 cloves garlic, minced

2 ½3 cups fresh baby spinach, packed

4 ounces cream cheese, cut into small pieces

¼ cup grated Parmesan cheese

¼ teaspoon dried basil

¼ teaspoon salt

⅛ teaspoon black pepper

⅛ teaspoon crushed red pepper flakes

2 tablespoons panko breadcrumbs

2 tablespoons grated Parmesan cheese (for topping)


Instructions

1. Preheat your oven to 375°F. Line a baking sheet with foil or parchment, or lightly oil the surface.

2. Wipe the mushroom caps clean with a paper towel and remove the stems. Place the caps on the prepared baking sheet.

3. Finely mince the mushroom stems and garlic.

4. In a skillet over medium-high heat, melt the butter. Add the minced mushroom stems and garlic, cooking for 2–3 minutes.

5. Add the spinach and cook until wilted.

6. Stir in the cream cheese, basil, salt, pepper, and red pepper flakes. Mix until the cream cheese is fully melted and smooth.

7. Fold in ¼ cup Parmesan cheese, then remove from heat.

8. In a small bowl, combine the panko breadcrumbs with the remaining 2 tablespoons Parmesan.

9. Spoon the spinach filling into each mushroom cap. Sprinkle the breadcrumb mixture over the top of each.

10. Bake for about 15 minutes, or until the mushrooms are tender and the filling is hot and creamy. Serve immediately.

Notes

These stuffed mushrooms are best served warm. You can assemble them ahead of time and bake just before serving.
