Description

Crispy rolls filled with tender chicken, melted cheese, and diced jalapeños, served with a creamy sweet jalapeño dipping sauce.


Ingredients

1 lb chicken breast

1 tsp seasoned salt

1/2 tsp black pepper

1/2 tsp paprika

1/2 tsp garlic powder

1 tbsp sour cream

1 tbsp canola oil

1 tbsp butter

4 oz Monterey Jack cheese (or Pepper Jack)

8 oz cream cheese

2 jalapeños, diced (seeds removed for less heat)

10 spring roll wrappers or egg roll wrappers

Sweet Jalapeño Dipping Sauce:

2 jalapeños, roughly chopped (deseeded for less heat)

1/4 cup cilantro

Juice of 1 lime

1 tbsp honey

Pinch of cumin

Pinch of salt

1/2 cup sour cream


Instructions

1. Pound chicken breast until even in thickness. Season with seasoned salt, pepper, paprika, and garlic powder. Lightly coat with sour cream and rest 30 minutes.

2. Blend jalapeños, cilantro, lime juice, honey, cumin, and salt until smooth. Fold in sour cream and chill.

3. Heat oil in skillet over medium-high. Sear chicken on both sides.

4. Add butter, flip chicken, and baste. Cover and cook 7–8 minutes until 165°F.

5. Cool completely, then shred. Mix with pan juices, diced jalapeño, Monterey Jack, and cream cheese.

6. Spoon mixture into wrappers and roll tightly. Seal edges with water and cornstarch.

7. Deep-fry at 350°F for 1–2 minutes per side or air fry at 400°F for 4–5 minutes per side.

8. Cool on a wire rack and serve with dipping sauce.

Notes

Remove jalapeño seeds for milder heat. Use Pepper Jack for extra spice. Rolls can be frozen before cooking for quick appetizers.
