A hearty, comforting casserole made with seasoned ground beef, creamy cheddar, and freshly grated potatoes baked until golden.
Ingredients
2 pounds ground beef
2 tablespoons olive oil, divided
1 cup chopped carrots
1 cup chopped onion
2 teaspoons finely minced garlic
1/4 cup sliced green onions
Salt and freshly ground black pepper, to taste
2 teaspoons dried oregano
1 cup chicken broth
1 cup sour cream
2 cups shredded cheddar cheese, divided
2 large russet potatoes (about 3/4 pound total), peeled and grated
Instructions
1. Preheat the oven to 375°F and lightly oil a shallow 2-quart baking dish.
2. Cook the ground beef in a large skillet until fully browned, then drain and set aside.
3. Add olive oil to the skillet and cook carrots, onion, and garlic until softened.
4. Stir in green onions, beef, salt, pepper, oregano, and chicken broth, then simmer gently.
5. Reduce heat and stir in sour cream and half of the cheese until creamy.
6. Spread the beef mixture into the baking dish.
7. Squeeze moisture from grated potatoes, toss with olive oil, salt, and pepper, then layer on top.
8. Bake until potatoes are tender and golden.
9. Add remaining cheese and bake until melted, then serve hot.
Notes
Squeezing moisture from the potatoes ensures a crisp top. Let the casserole rest briefly before serving for clean slices.
