Description

A quick Tex-Mex inspired pie layered with tortillas, chicken, enchilada sauce, and melted cheese.


Ingredients

1 cup green enchilada sauce

8 corn tortillas (6-inch)

2 cups cooked chicken, shredded

2 cups shredded cheddar cheese

1/4 cup sliced ripe olives

Salsa, optional for serving


Instructions

1. Preheat oven to 375°F and grease a 9-inch pie dish.

2. Warm enchilada sauce in a skillet over medium heat.

3. Dip four tortillas into sauce and layer in the dish.

4. Add half the chicken, cheese, and olives.

5. Repeat layers with remaining ingredients.

6. Bake uncovered 10–15 minutes until cheese melts.

7. Rest briefly before slicing and serving.

Notes

Use certified corn tortillas for gluten-free results. Let rest before slicing for best texture.
