A comforting baked dinner made with tender chicken, vegetables, creamy sauce, and crisp tater tots.
Ingredients
1 pound boneless, skinless chicken breast, cut into bite-size pieces
16 ounces frozen mixed vegetables
1 cup sour cream
1½ cups shredded Mexican-style cheese blend, divided
1 packet reduced-sodium taco-style seasoning
About 28 ounces frozen tater tots
Cooking spray
Instructions
1. Preheat oven to 375°F and coat a 9 x 13-inch baking dish with cooking spray.
2. Combine chicken, vegetables, sour cream, 1 cup cheese, and seasoning in a bowl.
3. Spread mixture evenly in baking dish.
4. Arrange tater tots evenly on top.
5. Cover with foil and bake for 30 minutes.
6. Remove foil and bake 20 minutes until bubbly.
7. Sprinkle remaining cheese on top and bake 5 minutes until melted.
8. Rest briefly before serving.
