Description

A quick stovetop burrito filled with seasoned ground chicken, rice, salsa, and melted cheese, then toasted until golden.


Ingredients

1 tablespoon olive oil or avocado oil

8 ounces ground chicken

1/2 cup red bell pepper, finely chopped

1/3 cup white onion, finely chopped

1 tablespoon jalapeño, finely minced (optional)

1 teaspoon garlic powder

1 teaspoon chili powder

1/2 teaspoon salt, plus more to taste

1/2 teaspoon ground cumin

1 cup cooked rice

1/4 cup green salsa or mild red salsa

1 tablespoon smoky chili sauce

1 cup shredded cheddar-style cheese

1 cup shredded Monterey Jack-style cheese

4 large flour tortillas


Instructions

1. Heat oil in a skillet and cook chicken, peppers, onion, and jalapeño until cooked through.

2. Add spices and cook until fragrant.

3. Stir in rice, salsa, and chili sauce.

4. Assemble burritos with cheese and filling.

5. Toast seam-side down until golden.
