Ingredients
1 loaf ciabatta bread
2 tablespoons extra virgin olive oil
1/4 cup fresh parsley, chopped
1 tablespoon fresh chives, chopped
1–2 garlic cloves, minced or finely grated
6 ounces cream cheese, softened
1/4 cup ranch dressing
1/2 cup buffalo-style hot sauce, plus more for serving
1 1/2 cups cooked shredded chicken
1 1/2 cups shredded cheddar cheese
1/2 cup crumbled blue cheese
Pickled Jalapeño Ranch:
1 cup sour cream or plain Greek yogurt
1 tablespoon dried parsley
2 teaspoons dried dill
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 cup pickled jalapeños, chopped, plus 2 tablespoons brine
2 tablespoons apple cider vinegar
1 teaspoon salt
2 tablespoons fresh chives, chopped
Instructions
1. Preheat the oven to 375°F. Line a baking sheet with foil or parchment paper.
2. Using a sharp knife, slice the ciabatta bread in a crosshatch pattern, cutting almost to the bottom but keeping the loaf intact.
3. In a bowl, mix the cream cheese, ranch dressing, buffalo sauce, garlic, parsley, and chives until smooth.
4. Stir in the shredded chicken, cheddar cheese, and blue cheese until evenly combined.
5. Gently pull open the cuts in the bread and spoon the chicken mixture deep into the crevices, spreading it evenly throughout the loaf.
6. Brush the top of the bread with olive oil and wrap the loaf loosely in foil.
7. Bake for 20 minutes, then uncover and bake for another 5 minutes until the cheese is melted and bubbly.
8. While the bread bakes, whisk together all the Pickled Jalapeño Ranch ingredients in a bowl until smooth.
9. Serve the bread hot with extra buffalo sauce and the jalapeño ranch on the side for dipping.
Notes
To save time, use rotisserie chicken.
