Description
A hearty one-pan Tex-Mex skillet with chicken, rice, enchilada seasoning, and melted cheese.
Ingredients
2 teaspoons olive oil
1 medium onion, diced
2 cloves garlic, minced
3 cups cooked chicken, shredded
2 tablespoons enchilada-style seasoning blend
2 tablespoons tomato paste
1 (15-ounce) can black beans, drained and rinsed
3/4 cup long-grain white rice
2 cups low-sodium chicken broth
1 (15-ounce) can fire-roasted tomatoes with green chiles
2 cups shredded cheddar-jack style cheese
1/4 cup chopped fresh cilantro
4 green onions, sliced
Instructions
1. Heat oil in a large skillet over medium heat and cook onion until soft.
2. Add garlic and cook until fragrant.
3. Stir in chicken, seasoning, and tomato paste.
4. Add broth, tomatoes, beans, and rice.
5. Cover and simmer until rice is tender.
6. Top with cheese, cover, and melt.
7. Finish with cilantro and green onions.
Notes
Adjust cheese and seasoning to taste. Add jalapeños for heat.
