Description
A comforting one-pan bake made with tender chicken, soft potatoes, and a creamy cheddar sauce, finished in the oven until golden and bubbly.
Ingredients
2 to 3 cups cooked chicken, cut into bite-sized pieces
6 medium waxy potatoes, washed and cut into ½-inch cubes
2 medium onions, diced into ½-inch pieces
1 large red or sweet pepper, seeded and chopped
1 cup mushrooms, halved or quartered
4 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups milk
¾ cup shredded cheddar cheese (for the sauce)
¼ cup shredded cheddar cheese (for topping)
Salt and pepper, to taste
Instructions
1. Preheat the oven to 400°F.
2. Melt the butter in a large oven-safe skillet or Dutch oven over medium heat.
3. Add the potatoes, onions, and chopped pepper. Cook until lightly golden.
4. Stir in the mushrooms, season, cover, and cook on low heat for 5 minutes.
5. Remove from heat, sprinkle in flour, and stir well.
6. Return to low heat and slowly add milk, stirring until thickened.
7. Add cheese for the sauce and stir until smooth.
8. Fold in the cooked chicken.
9. Sprinkle remaining cheese over the top.
10. Bake uncovered for 20 minutes until bubbly and golden.
11. Rest briefly before serving.
Notes
Use waxy potatoes for best texture. Shred cheese fresh for smoother melting.
