Description

A comforting baked casserole with tender chicken, sweet corn, seasoned rice, and melted cheddar cheese.


Ingredients

1 box yellow rice mix

1/2 cup butter, melted

1 can cream of chicken soup

1 to 2 cups cooked chicken, shredded or chopped

1 can whole kernel corn, drained

1 1/2 cups shredded cheddar cheese, divided


Instructions

1. Preheat oven to 350°F and grease a casserole dish.

2. Prepare yellow rice according to package directions.

3. Mix cooked rice, butter, soup, chicken, corn, and 1 cup cheese.

4. Transfer to baking dish and top with remaining cheese.

5. Bake uncovered for 30 minutes until hot and bubbly.

6. Rest briefly before serving.

Notes

Use rotisserie chicken for convenience. Let rest before serving for best texture.
